Like most vegetables Tomatoes come in hundreds of varieties, there are tomatoes for eating, tomatoes for cooking and tomatoes more suited to preserving for use later on, there are also tomatoes breed for specific disease resistance like blight and other pests that can ruin a good tomato crop in a short amount of time.

Great eating tomatoes suitable for fresh salads in the summer time need great flavor, low acidity and plenty of juicy goodness, varieties like Black cherry tomatoes are great to eat whole, they have a super rich flavor and great bright colors, the Roma tomato is also an other great tomato for eating or putting into salads and can be used for cooking as well.

Cooking tomatoes usually have a firm texture and tend to be a bit dry in taste, these varieties are not intended for eating, tomatoes like the Red Pearl Grape and the Valencia Orange variety are great for roasting in an oven on pasta or for winter soups, the Valencia produces a traditional orange colored soup which looks very appetizing and tastes great.

Selecting Tomatoes suitable for preserving you need a variety that has a ton of flavor and high in acidity these two qualities make a great tomato preserve, the Black Krim tomato is a good preserver it has a great full taste, the Marglobe Supreme has a high acidity and the fruit is large and also great for tomato juice.
