There a hundreds of varieties of potatoes around the world and each country has there own varieties specifically grown to suit the climate of a particular area, and choosing a variety for your self sufficient lifestyle you need to pick one for the intended use rather then for the variety or breed of potato.
Different varieties produce different results when cooked, a waxy smooth textured potato is ideal for boiling to use in salads and casseroles etc, these type of potatoes have a high water content in there structure and a dense texture and retain there shape when cooked they are also low in starch which is key to boiling a potato, Perla and Nadine are good for boiling.
On the other end of cooking scale if you want to bake or roast a potato for chips or wedges in an oven then you need a variety that has a fluffy or floury texture, these potatoes are low in water content and have a high starch content and there texture is delicate and break up easily when cooked a good example would be Agria or Red Jackets for baking purposes.
There are specific potato varieties that are both good for boiling and for making chips and roasting in a oven, an example would be Vivaldi and Moonlight varieties these have moderate content of starch and there texture is neither floury or waxy so they perform both duties of boiling and roasting.
